Wegmans Garlic & Fennel Chicken With Cheesy Macaroni and Broccoli and Califlower
One of my favorite grocery stores near us is Wegmans. They take a lot of pride in all of the products they carry and especially in the products that they make. Their chicken breasts are out of this world, and their line is full of different flavors. Keith has never tried anything with fennel in it so he wanted to see what the Garlic & Fennel Chicken Breast would taste like. Along with it we made the Cheesy Macaroni and Broccoli, adding in Califlower!
The marinade that the chicken was swimming in glazed up really nice coating it in the flavor, and giving it a bit of a crunch. If you have a Wegmans near you keep your eye out for their delicious line of chicken breasts! They are going to be a summer staple in this house.

Keith's Pita Breakfast Pizza Recipe
Breakfast time at my house usually involves three different meals. Keith and I just like our own different versions of things and Korey is a bit too young. I only eat egg whites and usually my meat is turkey, he eats everything ha! One morning he made himself this Pita Breakfast Pizza, an inspiration that came from his usual gas station breakfast pizza he has.
Preheat oven to 250F. On the pita add scrambled eggs, bacon and top with cheese. Cook for 15-20 minutes until cheese is melted.
ENJOY!

Pita Breakfast Pizza
1 whole pita
2 slices precooked bacon torn in pieces
2 scrambled eggs
Shredded Mozzarella and Mild Cheddar to tastePreheat oven to 250F. On the pita add scrambled eggs, bacon and top with cheese. Cook for 15-20 minutes until cheese is melted.

Cheesy Macaroni and Broccoli
The size should be about a cube of cheese that you usually see sold as snacks. This helps them melt quicker.
Preheat oven to 350F.Next add the garlic and milk to the cheese in a medium size sauce pan. Cook over low stirring often to prevent cheese from sticking. Once all the cheese is melted you can move onto the next step, usually melts in about 10 minutes. While your melting this you can start making the pasta! Forget to take a picture of that!
In a 8x8 glass pan add the pasta, pour over the cheese sauce DO NOT STIR! Next add your choice amount of mild cheddar over the top and a little mozzarella.Then add breadcrumbs over top. Cook at 350F for 30 minutes or until top is golden brown.

Kona Coffee - or is it?
Kona coffee is famous world wide for its full flavor, infused from the rich volcanic soil on the southwest side of the Big Island of Hawaii. So naturally visitors to the islands often include Kona coffee on their souvenir and gift lists. Kona coffee is available at many Hawaii locations including big box stores, convenience stores, groceries and specialty shops. Kona coffee is also available at some stores on the US mainland and online. Prices can vary widely according to where you shop but there is another factor to consider when making a purchase.
Is it really Kona coffee?
Coffee beans grown in Kona are processed by many different companies and bagged for sale under a variety of labels. The name 'Kona coffee' has a strong influence on the buyer so it is always prominent on the packaging. But most consumers are not aware that a content of as little as 10% real Kona coffee permits the package to be label with the Kona name. That's ten per cent.
The Kona Coffee Farmers Association has recently asked the Hawaiian government to require blenders to disclose the full contents of their blends in order to protect the integrity of the Kona name. Currently labeling is 'voluntary' and few are willing to comply. The 'Coffee Origin Disclosure Bill' asks that the remaining 90% be identified (usually South or Central American) and that the label be made more readable.
This has been an issue in Hawaii for over 20 years with both the growers and the packagers trying to influence Hawaiian lawmakers and regulators while the customer is left on his own. The emergence of the Hawaiian Ka'u brand, a neighbor of Kona and now sold at 250 Starbuck's, may also become an issue for those growers.
So for now it is up to the consumer to beware. If that bag of 'Kona coffee' looks surprisingly inexpensive the surprise may be that there is very little genuine Kona coffee in there. Real Kona coffee is always labelled 100% Kona and will be more expensive than the blends. Ten percent blends will always be labelled as such but that is often in the 'fine print'.

Chicken Slovakia And Greek Salad, Sort Of. Recipe.
This is my last minute idea to have Chicken Slovakia and Greek Salad. What I would have loved was some kalamata olives, peppers, tomatoes and a pita. That's what next months shopping is for! Here is my quick recipe for Chicken Slovakia and Greek Salad.
Greek sauce/dressing mix:
2 TBSP. Greek Yogurt
1/4 c. Oil ( I had vegetable on hand only)
1/4 tsp salt and pepper
1/4 tsp oregano
1 TBSP. garlic
1/4 tsp lemon
1. Make 2 batches if you want to use it as dressing over the salad. Mix all together until blended well. Can be kept easily in the fridge.
Chicken Slovakia and Greek Salad:
1 lb. Skinless Chicken Breasts
1 c. long grain rice of choice
Mixed salad greens
Salad toppings (croutons,tomatoes,olives)
1. Marinade chicken in greek sauce for 30 minutes or overnight. Cook low until no longer pink.
2. While chicken is still cooking prepare rice according to directions.
3. When rice and chicken are done, cut up chicken and serve over top of rice. Use remaining greek sauce mix to pour over salad greens or chicken and rice. Enjoy!

Chicken & Steak Fajitas with Homemade Nachos
For the Chicken and Steak use 2 Fajita sauce packets and cut up some onions and peppers. Mix it all together with the cooked steaks and chicken. Enjoy!
These nachos were amazing but Keith wants to perfect these before he will release a recipe.

Behold White Chocolate Almond Bark with Almonds and Drizzled Chocolate.
I made this VERY easily and in about 20 minutes total.
1 full bar of white chocolate almond bark
4 pieces of a semisweet chocolate baking bar
1 cup roasted almonds
1. Melt the full bar of almond bark. Follow the directions on the back for heating it up. Spread on wax paper on a cookie sheet. The bigger the sheet the thinner your bark.
2. After white chocolate is spread throw on almonds.
3. Melt baking bar according to directions. Use a spoon to make small dots on the white chocolate. With a knife make huge 'S' shapes to make the swirl pattern. Drizzle more on top if wanted.
4. Put in freezer for about 10 minutes and then break. Store in an airtight container in the fridge and enjoy!

Country Sweet Chicken Pizza
I do not have the exact recipe. My boyfriend pretty much threw together Mild Country Sweet, Chicken, Mozzarella and Mild cheddar cheese. You can add mushrooms,onions, peppers, pretty much anything else!
