Papaya and Walnut Salad with Tropical Fruit Dressing

Some days it feels like Summer has already started. I just don't have the will from the heat to want to cook all the time so it's easier to make a salad. Now we all know we can't just do with a plain old salad, we need to spruce it up with some items that will help us cool down. Here is a salad I whipped up the other day to cool down in the afternoon.



Papaya and Walnut Salad with Tropical Fruit Dressing
For Salad:
Lettuce
Handful of chopped walnuts
Red and Yellow Papaya pieces (found in Tropical Fruit cans)
Snap peas

For Dressing:
Olive Oil
Apple Cider Vinegar
dash of salt and pepper
Juice from tropical fruit

Make sure you wash your lettuce before you use it! Put lettuce in a bowl and add papaya, snap peas and walnuts. To make the dressing mix together a splash of olive oil, apple cider, tropical fruit juice and salt and pepper. Give it a good stir and pour over the salad. It's really easy to whip up and make when you want something healthy but don't want to put a lot of effort into making it.
